Zucchini Tuna Melt by Chef Genie
Serves 1
Ingredients:
2 Pouches | Tuna |
1/4 container | Single Serving Container of Nonfat Greek Yogurt |
2 Tbs | Sharp Cheddar Cheese |
1/4 | Jalapeno |
1/8 Medium | Red Onion |
1 Medium | Zucchini |
1/2 tsp each | Salt & Pepper |
Directions:
- Wash and slice zucchini in half lengthwise.
- Use a spoon to scoop out the center.
- Season the zucchini with salt and pepper. Place on a foil-lined sheet pan and bake for 10 minutes at 350F.
- While the zucchini is in the oven, combine tuna, diced red onion, greek yogurt, salt, and pepper.
- Spoon the tuna mixture into the zucchini boats.
- Top with cheddar cheese and thinly sliced jalapeño.
- Broil until golden brown, and enjoy!
