Zucchini Tuna Melt by Chef Genie

Craving a healthy twist on a classic? Try my Zucchini Tuna Melt—packed with flavor, low in carbs, and perfect for a quick, nutritious meal!

 

Zucchini Tuna Melt by Chef Genie

Serves 1

Ingredients:
2 Pouches Tuna
1/4 container Single Serving Container of Nonfat Greek Yogurt
2 Tbs Sharp Cheddar Cheese
1/4 Jalapeno
1/8 Medium Red Onion
1 Medium Zucchini
1/2 tsp each Salt & Pepper

Directions:
  • Wash and slice zucchini in half lengthwise.
  • Use a spoon to scoop out the center.
  • Season the zucchini with salt and pepper. Place on a foil-lined sheet pan and bake for 10 minutes at 350F.
  • While the zucchini is in the oven, combine tuna, diced red onion, greek yogurt, salt, and pepper.
  • Spoon the tuna mixture into the zucchini boats.
  • Top with cheddar cheese and thinly sliced jalapeño.
  • Broil until golden brown, and enjoy!
